Sourdough
A few weeks back, my partner (a chef in her own right) began the process of bringing to life sour dough starter.
We named him Barry.
Just a few days later, she had to leave and I was left alone with Barry. And well I had to learn how to take care of him, which has been a highlight of 2023 so far.
Every evening, I had to scoop some of him out. Throw it away. Add in equal parts of flour and water. Mix it with the half-leftover mix and store him in a dry place.
In a few hours he'd rise with pockets on bubbles in him.
This was life. My partner mentioned how Barry isn't one thing. He's a collective of millions of micro-organisms in there.
But then, aren't we also a similar collective..
